Our management selection process involves recruitment of individuals who possess all of these qualities. Creativity is paramount because the task of implementing a food program that serves the needs of a particular institution is granted to each individual food service director. However, each director must utilize the management tools provided in order to establish a program that best serves the needs of the unit.
A manager must be responsible in the areas of supervision, administration, production and accounting to insure that the operation is sound and conforms to all policies and procedures as outlined in the Unit Operation Manual.
